Piper and Ryan were on winter break this past week, lucky! They somehow get a fall break, Thanksgiving break, Christmas break, winter break, and a spring break. No wonder they love their new school, John was like, "Are they accredited?" They were living their best lives, sleeping in and slumming it on their computers all day, no doubt. 

I decided I wanted to move my projector screen to the front of the classroom, and it's been a whole ordeal. At first, they moved it directly in the middle of the room. It was comically bad. They then moved it in the right spot, but it's too far from my projector, and it can't focus. I couldn't use it for 3 days last week. I really can't teach without it. They are working on a solution, worst case scenario, I just have it moved to its old spot, which was near the kitchens and just kind of annoying but WAY better than unusable. 

Tomorrow a couple of my culinary students and I are traveling to BSU to teach a class on easy meals on a budget. I think it's for disabled young adults who need some assistance. I'm not 100% sure. I'm pretty stressed about it. We made a bunch of the food on Friday, and tomorrow I have to try to reheat it and put it in the big catering warmers and transport them to BSU. We are also cooking live, so I have to bring portable burners and cooking equipment along with recipe supplies. I can't wait until tomorrow at 3:00 when it's done. Wish me luck!

The girls and I did way too much shopping for our Hawaii trip, and we were very successful at finding cute things to wear while we are there. I think a spending fast will be in order after this. Luckily we found the cutest dresses for them to wear on the wedding day. I'm so excited we found something that all 3 of us could agree on. The girls look so cute in their dresses! 

We celebrated Gabby's birthday with me today. I made her a special breakfast, dinner, and a cake. I can't believe she's 16 already! Crazy.

I don't have much from the week. Same old, same old. On Friday night, my friend Krista threw me an amazing bachelorette/galentines party. She went WAY over the top, it was so nice! We had a night in, which is my favorite. Good food, good friends, in cozies, heck yes! I was definitely spoiled for sure. Valentine's Day was good. John got me chocolates and flowers like I like and want. We made dinner at home together. We recreated an early date where we made eggs benedict and somehow I made it worse this time. It still tasted good, but it certainly wouldn't earn any culinary awards. John surprised me and made me a secret Valentine dessert. It was so cute and so good. It was some sort of cookie, peanut butter bar situation. Yum! It's a 3 day weekend. Woot. I'm excited to have another day to do whatever!

Gabby turned 16 on Friday. She is with her dad this week, so we will celebrate again when she is with me. She had a great 16th birthday bash. Well, that's all!

The Hollandaise sauce was a quick hack, but it didn't turn out thick enough; it did taste good. Really good!

This past week has been pretty good. I got some sort of flu of sorts, who knows. I had a cold, but then Tuesday morning, I just felt extra crummy and had a weird stomach ache, headache, and just felt unwell. I hurried and wrote a sub plan and bailed from work. It also happened to be on the day that our garage door needed to be fixed, so it was convenient in that I was home for the repairman to come and fix it. $600 later. Don't you just love out-of-the-blue expenses? Apparently, you need to grease your garage door springs every 6 months, so John has put that reminder in his phone. Corbin had the flu a week ago, and Gabby was also sick. Ryan missed school on Friday but seems to be alright now. It's going around for sure. I still didn't feel great on Wednesday or Thursday, but I didn't feel like I could skip school again. I feel back to normal now. 

I got my formal evaluation over with last week. I love checking those things off my list. My VP is super laid back, so it's not stressful at all, which is nice! 

Corbin has earned 28 college credits throughout his high school career. Mostly math and science classes. Good work Corbs! Gabby is already taking several college courses, so I'll be curious how many she has earned by the time she graduates. Piper's meds aren't working as well, which is annoying. She's still doing well in school, though. Gem Prep has been a very good switch for her. Ryan is doing great. He's such a cute, funny boy. I don't want him to grow up. Stay my baby forever, Ryan!

I felt like celebrating Valentine's Day with my kids this week since I won't see them next week. I made a special breakfast and got some very expensive chocolates. Never again. LOL. I have a friend who owns a local candy store, so I thought I would support her. Holy smokes, they were expensive. Oh well. For breakfast, we had crepes with fruit, fried red potatoes, eggs, and bacon. I made Ryan a slice of French toast with my homemade artisan bread because he loves French toast. It was a feast. Making yummy food is definitely how I show my family love. haha. 

Hutch and Charly love me so much. They follow me around waiting for me to sit down so they can cuddle next to me. It's pretty cute!
